Spinach Cordon Chicken Parm

Directions:

    1. Make sure your white sauce mixture is prepared. To make the white sauce, you will use butter, flour, milk, and add parmesean cheese at the end. Directions are available here.
    2. Preheat Oven to 350°F
    3. In glass baking dish, add red potatoes and spread out evenly.
    4. Prepare your bread crumb mixture: 1/2-1c bread crumbs, 1/4-1/2 package of Spinach Parm, salt & pepper to taste. Mix with a fork and spread out on flat surface.
    5. Put a whipped egg on a flat surface (like a plate) to use as a coating for the chicken.
    6. Coat the chicken by first placing each side in the egg wash then each side in the bread crumb mixture. Add it to the top of the potatoes in the dish. Repeat with remaining chicken breasts.
    7. Put the dish in the oven for 20 minutes. (Chicken will not be fully cooked yet).
    8. Add white cheese sauce and spread over the top of the dish.
    9. Add cooked ham pieces.
    10. Sprinkle the top with parmesan cheese.
    11. Cook an additional 20 minutes until chicken is done (165°F with meat thermometer)
